Savory Spud Salad with Goat Cheese

  • 2 lbs, cut into small pieces red potatoes
  • 3/4 cup olive oil
  • 1/2 cup balsamic vinegar
  • chopped green onions
  • chopped parsley
  • crumbled goat cheese

3 simple steps

  1. Coat potatoes in half of the olive oil and balsamic vinegar, add salt and pepper; arrange on a baking sheet
  2. Cover with tin foil, and roast for½ hour at 375°F
  3. Combine remaining olive oil, balsamic vinegar, and green onions; when potatoes are done, toss with other ingredients until goat cheese is creamy; serve immediately
